Pancakes for peace

Madeline, 13, is just one of the people from around Australia who will be involved in a pancake event to help promote Project Compassion this year.

Schools, parishes and businesses from the top end of Australia to Tasmania will be cooking pancakes to sell and making sure the proceeds are the first coins to fall into the Project Compassion box.

Pancakes are easy to make and are traditionally eaten on Shrove Tuesday to mark the beginning of Lent.

Madeline has a deep commitment to social justice and gives regularly to help children in other parts of the world who are less fortunate than she is.

“I know I’m lucky – and I like to do what I can to help people from other parts of the world.

“Project Compassion helps people from places that I haven’t even heard of. I learn a lot about people from other countries when I read about Project Compassion and Caritas.

“And I love pancakes,” she said.

This year during fundraising activities in Lent, Project Compassion will share the stories of Promila, who has started a fish farm in Bangladesh, of John, a boy who lost his home because of violence in the Solomon Islands, and Maria from East Timor, who is the garden co-ordinator for the women’s group growing crops in her village. All of them are being helped by donations to Caritas Australia, which have then been used to fund aid and development programs.

Here is a pancake recipe for Shrove Tuesday

Ingredients:
2 tablespoons butter
1 cup plain flour
1 pinch salt
1 cup milk
2 eggs

To make:
Stir together flour, salt and milk
Stir egg (to combine white and yolk thoroughly)
Melt butter
Add egg and butter to the dough and stir until well blended
Heat a fry pan and grease with oil
Bake pancakes one after the other for about 2 minutes each side so that they are golden brown.
